Fast forward several weeks and T and I were working on some school work. He was breaking up the word muffin in his Explode the Code workbook and he had a light bulb moment: "We should make muffins after this!!" he said. And so we did.
While I was searching for the magazine, T had already pulled the milk, flour,and eggs out! The article featured three recipes by Catherine, who is the master-mind behind the food blog Weelicious. I have several of her recipes pinned on my food boards and have yet to make them by the way. But since we devoured these muffins, I think I'll be putting her other recipes on the top of my "must-make" list!
We made 12 regular sized muffins around 3 p.m. and by 6... there were only 3 left! Ha! You do the math ; ) They were yummy & healthy, too!! (Bonus!!)
I ended up using Olive Oil, instead of Veggie or Canola because that is what we use-- for everything! I am sure you could also sub in Coconut Oil, too.
And because we made larger muffins, they took longer to bake... maybe 25 minutes?!
